Ice cream is the perfect summer time cool treat. Maybe Andrew Anderson would have liked this refreshing dessert on his sore throat? Either way, this ice cream recipe is really easy and doesn't need an ice cream maker. All the ingredients mix together and then sit in the freezer. Feel free to add in extra mix-ins. This week we tried blueberries and strawberries.
Ingredients
- 1/2 cup sweetened condensed milk
- 1 ounce Ghirardelli white chocolate chips
- 1 tablespoon vanilla extract
- pinch of salt
- 1/4 cup sour cream
- 1 1/4 cups cold heavy cream
- 1 cup frozen blueberries
- 1 cup diced fresh strawberries
Instructions
In large microwave safe bowl, mix sweetened condensed milk and chocolate chips together. Microwave for 1 minute at 50% power and then mix again. Continue microwaving at 50% power in 20 second intervals until the chocolate is melted. Set aside to cool. When cooled, add vanilla and salt.
In a separate large mixing bowl, beat the cream until soft peaks form (about 3-4 minutes) on high speed. Take 1/3 of the cream and stir into the sweetened condensed chocolate mixture. Fold in the remaining cream with a rubber spatula into the sweetened condensed chocolate mixture. Add in blueberries and strawberries and continue to fold until the ingredients are incorporated.
Place mixture in an air-tight container and place in the freezer for at least 6 hours. Ice cream is ready when the mixture is set and frozen.
